BBQ Chicken Pizza

Ingredients

  • Pizza Dough: Use 1/2 recipe of homemade pizza dough (or 1 lb. of store-bought dough).
  • Olive Oil: 1 tablespoon, divided.
  • Cornmeal: 1 tablespoon for dusting the dough.
  • Billy-Joe’s BBQ Sauce: 1/3 cup + 2 tablespoons (130g), plus more for dipping.
  • Chicken: 1 cup chopped or shredded cooked chicken (about one 8-ounce breast).
  • Cheese: 1 1/2-2 cups Monterey Jack shredded
  • Red Onion: 1/2 small, thinly sliced.
  • Cilantro: 1 tablespoon chopped fresh cilantro (or use basil) for topping.

Directions

Prepare Dough: Follow your pizza dough recipe up to step 3, or thaw store-bought dough. Preheat oven to 475°F (246°C). If using a pizza stone, preheat it as well. Grease a baking sheet or pizza pan with 1/2 tablespoon olive oil and sprinkle with cornmeal.

Shape Dough: Punch down dough to release air. Divide in half, saving one half for later. Flatten dough into a 12-inch circle on a floured surface, leaving a lip around the edges. Let it rest if it shrinks.

Top the Pizza: Poke dents in the dough to prevent bubbling. Brush with remaining olive oil. Spread 1/3 cup BBQ sauce on top. Toss chicken in remaining sauce, then layer chicken, cheeses, and red onion.

Bake: Bake for 14-15 minutes until the crust is golden. Top with fresh cilantro if desired.
