Cobb Salad

Ingredients

  • 1 chicken breast
  • Billy Joe’s Barbecue Sauce (for grilling)
  • 3 strips of bacon
  • 1 boiled egg
  • Romaine or green leaf lettuce
  • 5 cherry tomatoes, halved
  • ½ avocado, diced
  • Green onions, diced
  • Ranch dressing (to taste)

Directions

1. Grill the Chicken:
Preheat the grill to medium-high heat. Brush the chicken breast generously with Billy-Joe’s Barbecue Sauce. Grill for 6–7 minutes per side, or until the internal temperature reaches 165°F (74°C). Remove from heat and let rest.

2. Cook the Bacon:

Option 1: Preheat oven to 400°F (205°C). Place bacon strips on a lined baking sheet and bake for 15–20 minutes or until crispy.

Option 2: Cook bacon in a skillet over medium heat until crispy, flipping as needed. Drain on paper towels.

3. Prepare the Egg(s):

Boil one egg to your desired doneness (about 9–12 minutes for hard-boiled).

4. Dice and Prep Vegetables:

  • Slice cherry tomatoes in half.
  • Rip up lettuce into bite-sized pieces
  • Dice ½ avocado.
  • Finely chop green onions.

5. Assemble:

Lay lettuce in a bowl. Slice or dice the grilled chicken breast. Arrange with bacon, egg(s), cherry tomatoes, avocado, and green onions in a bowl or on a plate.

Drizzle with ranch dressing to taste. Serve immediately.

Billy's Tips:

Make sure not to overcook the chicken breast. And remember... salad won't kill you.
